Having said that let’s start at the end; dessert. Today we have a delightful gingerbread-ice-cream-sandwich with rum sauce.
1/3 cup butter 1/2 cup beer *
1/4 cup sugar 1/2 cup molasses
1 egg, beaten 1 1/2 cups flour
1 tsp. baking soda 1 tsp. ginger powder + 1 tsp. grated fresh ginger **
Put beer into sauce pan over medium heat and bring it up to a simmer. Add butter and stir until melted. Add sugar, molasses and egg. Combine well. In a separate bowl combine flour, soda and ginger; then combine with liquid ingredients. Pour into loaf pan and bake at 375F for 20-30 minutes.
* Now you can use your favourite beer at this point or look for something a bit more exotic, the last time I made it I used a strawberry beer; or you could just use water instead.
** You can use 2 tsp. of either the ginger powder or the fresh ginger; whichever you prefer.
Chill the gingerbread in the freezer for approximately half an hour. Then slice to your preferred thickness; one-half inch is probably best. Take your favourite ice-cream and cut a slice of it the same size as the gingerbread. Put ice-cream on one slice of gingerbread then top with a second slice. Store in freezer, then remove 15-20 minutes before serving.
The rum sauce is optional and you could substitute any sort of a sauce that you think would go well with it, i.e. pineapple sauce, chocolate sauce, etc.
RUM SAUCE
1/4 cup unsalted butter
1/2 cup whipping cream
1/2 cup packed dark brown sugar
1 pinch salt
2 tablespoons dark rum
Melt the butter in a sauce pan over medium heat. Stir in brown sugar until completely melted stir in cream, salt then rum. Lower heat and let simmer while stirring for approximately 3-4 minutes. Enjoy
I want some of that Blue Beer! I’ve had the green for St. Paddy’s day but never blue. Sounds good. :}
The beer itself isn’t blue. It’s named after the rare Blue Beaver, found in the Horseguard Valley. The Blue Beaver frolics in the icey-cold waters of the mighty Horseguard River.
This recipe is a interesting twist on a classic – I will have to give it a try.

You’d be surprised! My wife lets me cook supper all the time. I specialize in main course, in amounts large enough to feed two adults and 3 growing children. The only thing I don’t do is cakes, but I’ve made pie. But I’m just an amateur. Ernie worked as a kitchen manager for years, at more than one location, so there you have it. We have a couple skills besides beer drinking
But nothing beats cooking with beer.

Well Tammy, if he goes to the liquor store and picks out 5 or 6 different beers that will increase your menu choices. You can add beer to almost anything and make it taste better. So, you guys want pictures and/or a video? If I can sucker someone in to being my camera person I might be able to do a brief demo.

Men that can’t cook is lame. People seem to think it’s still funny or cute that guys are totally lost in the kitchen whose culinary repertoire consists of instant noodles and macaroni…newsflash – it’s not.

That sounds good i was suprised. Would be good after some deep fried vegtable plater since i like to eat healthy. This way i get my vegtables and some ice just like when i was a kid.

It’s amazing how you can make or discover such wonderful recipe out of a normal sweat ice-cream recipe. A flavor or Rum ice-cream, who would have thought of? I will have to try this right out
I am one of those people who can’t help but try out a new dessert recipe so I am definitely going to give this a go. If I can mix ice cream with rum, my husband will realise I’m quite simply the best woman in the world because he has a major sweet tooth! I admit, it does sound very appealing to me too…
